Tofu, Chickpea, Artichoke and Potato Soup

Ingredients
- 1 large potato, diced
- 3 cloves garlic, finely diced
- Half block of extra-firm tofu, pressed, drained, and diced
- 1 can chickpeas, rinsed and drained
- 1 can artichoke hearts
- 1 tomato, diced
- 2 stalks celery, chopped
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Vegetable broth (enough to cover everything in the pressure cooker)
- 1/4 teaspoon ground black pepper
- Capers, for garnish
- Iodized sea salt, to taste (optional)
Instructions
- Place all ingredients in the pressure cooker and lock the lid in place.
- Bring to pressure and cook at pressure for 6 minutes.
- Use a quick release.
- Serve over greens and garnish with capers.
YIELD: SERVES 3 – 4

How’d you know?? You sold me on the idea. Thanks for all the recipes. Can’t wait to try them. We have a move coming up in 2013 also and the fact that you lived cooking with just the pressure cooker until your household goods arrived convinced me!
